Paul Dunlop - Executive Chef & Owner

Paul’s culinary journey began in Auckland, New Zealand before heading to London and beginning his love for Euro inspired cuisine. Returning to Melbourne Paul lead the kitchens of La Brasserie & Bistro Thierry.

A stint in Lyon, France and the chance to work in famed Michelin starred establishments such as Pierre Orsi and Le Bec solidified his French credentials. Joining George Calombaris at The Press Club and St Katherines, Paul was introduced to more bold and playful flavours.

In 2013 gg was established and has allowed him to combine his food memories forged by travel and experience with modern technique. His loyal gg clientele take every opportunity to let him take care of everything.


Renee De Boer - Restaurant Manager

With a passion for food, an extensive knowledge of wine, a love of people and a keen eye for detail - Renee makes an outstanding restaurant manager and has been leading the front of house team at GG’s for over 4 years now. Between organising the team, coordinating functions and working on the floor in the restaurant it’s safe to say that Renee know’s everything that goes on here. She is most happy when receiving positive guest reviews (which happens often) and drinking a glass of Soave.
